Keep your angle consistent throughout the stroke across the stone. Do not let the handle drop!
· Pressure may vary depending on the degree of dullness. In general, this approach is designed for people who keep a knife sharp. Once it dulls, you will have to use more pressure on the first two strokes. Final stroke will always be medium-medium light. Too much pressure on the final stroke will curl the burr too much, making your knife feel dull.
· Always do these same three strokes, in the same order, every time you sharpen
The general process:
1. 30-40 degree angle, blade away from you
2. Flat, blade toward you
3. 15-20 degreed angle, blade away from you
